Its what I get to eat everyday for the next week or so.

I make homemade noodles and extra turkey gravy and eat turkey and gravy over the noodles. Ultimate comfort food.

Also, I have to buy Wonder bread and real mayo (I never ever eat mayo) and eat white turkey sandwiches on white bread with mayo and pepper. Has to be just like that or I freak. I'm so flexible. I never tire of these sandwiches, I just run out of turkey.

I make a turkey pot pie.

Turkey, gravy, stuffing and veggies, you use up alot of left-overs that way

This is a recipe from an old friend. They called it tukey tetrazini, although it's clearly not.

Step One: Remove all of the meat from the bird. Discard the carcass.
Place the remaining turkey in a double boiler with a bag or frozen peas, a cup of dry sherry, a cup pf worcester sauce, and maybe a pound of sharp cheddar (adjust the ingredients, of course, depending on how much turkey you have). Healt until melting and serve over rice. What's left can be frozen.

we eat it just like the original dinner or use the meat in place of the chicken in any meal I would normally cook. We love turkey.

eat them! Actually, I freeze the turkey into ziplocks, with just enough for 1 meal, then I use it in place of chicken as I cook for the next month or so.... we love haystacks,(chicken, cream chicken soup, rice, pinapple....) chicken rolls, etc. all good with turkey instead

Re: what do you do with the left overs from thanksgiving?

I make what I call Thanksgiving sandwiches: turkey, cranberry sauce and stuffing with mayo (or the gravy, while it lasted) on white bread. Love it!

My mother always used to buy a very large turkey every Thanksgiving. My father would slice off all the meat with an electric knife. Mom would then package the meat for the freezer, marking each one white or dark meat. The turkey could then be used over time for sandwiches or whatever struck our fancy. It was a great time saver for Mom because she could just thaw a package of cooked turkey and whip up something easy for dinner.

Back when turkeys were inexpensive at Thanksgiving time she would buy two of them and the second one would stay in the freezer until Christmas when the above process would be repeated.

last year I ended up buying 4. We don't have the freezer room this year or I would do it again.

we never have leftovers becuase we always eat at one of hte casino's for turkey day.
and since its just the two of us, i rarely buy anything more than a large breast when i do make turkey. what ever's left them becomes hot open-faced turkey sandwiches, or cold turkey sandwiches

Every year we rotate among my dad's side of the family that lives here in the area for thanksgiving. when we don't host we don't have leftoversm unless someone makes a request to bring something home with us. And when that happens it is usually not significant enough to be a big deal. When we host we don't usually end up with a lot because it ends up being pot luck (this occurs at Christmas too) but for the main course we will either makes soup or sandwiches on the days afterwards, freeze it, or people take off with it. My Uncle is a firefighter so some food always goes with him to feed the station.

Here's another option. My friend has invited me over on the Saturday after thanksgiving to watch the Georgia vs Georgia Tech football game with other friends. the food will consist of light snacks and Thanksgiving leftovers. That's a pretty easy and fun way to get rid of them!

I always cook two turkeys so that we have leftovers. Some of the family's favs are:

                              Turkey potpie
Turkey noodle soup. (made with fresh turkey stock, yum.)
Potato pancakes (from the leftover mashers)
                              Turkey soft tacos

The fam is happy to have prime rib or whatever by the time Christmas rolls around. :-)
