Anyone else cooking Easter Dinner?

  • Anyone else cooking Easter Dinner?

    I'm cooking an Easter dinner for my family of 15 on Sunday.
    Seems I'm always 'elected' to host holiday meals because I'm such a great cook, with all the credit and thanks to the Food Network and allrecipes.com :lol:

    Heres the menu:

    Either Garlic Prime Rib or AB's Brined Roast Turkey (we are not big ham eaters)
    Cheesy Au Gratin Potatoes
    Lemon & Almond green beans
    Spinach Strawberry Salad with balsamic viniagrette
    Crusty french bread rolls

    And for the ta-da desert:

    My famous secret Carrot Cake with cream cheese frosting! YUM!:thumbup:

    Honeybaked Ham with their sides (yum!).

    I might bake a coconut cake. We'll see how well I feel.

      Hmm - looks like we'll be having dinner with you!

      That menu sounds/ looks fabulous.

      We'll be having a smaller dinner (just DH, my parents and me) and will go with the traditional ham. Plus, green beans w/ almonds, scalloped sweet/white potatoes, rice and possibly a green salad.

      Not sure about dessert.

        Wow what a coincidence I am cooking for about 15 (maybe more) too!! It is okay we have been having Easter and Thanksgiving over my house for the last 3 years, I enjoy all the cooking.

        For dinner I'm making:
        • Honeybaked ham with my raisen sauce
        • lasagna and meatballs
        • oven roasted potatoes
        • candied yams
        • green bean casserole
        • pasta salad
        • corn
        • baked stuffed shrimp
        Desserts:
        • key lime parfait
        • bread pudding ala mode with banana foster sauce
        • chocolate mousse in chocolate dessert shells
        Appetizers:
        • deviled eggs
        • strawberry and pineapple fruit plate with cream cheese fruit dip
        • various cheeses and cracker plate
        Plus my Mom said she was bringing her rice pudding and sister in law is making Italian annisette cookies.

          We are also hosting Easter for our families (which I prefer than to go anywhere) Our menu:

          Honey Glazed Ham
          Roast
          Cheesy Scalloped Potatoes
          Homemade Mac N Cheese (yummy)
          Glazed carrotts
          Garlic and butter fresh green beans
          Garlic rolls

          Not sure yet about dessert, I think my Mom is bringing something, and we have a tiramisu (sp?)

          I love holiday meals

          A little piece of heaven

            We are having Easter at our house for the first time in a few years. I am keeping the menu simple and light:

            Honey Baked Ham (yum!)
            Chinese Chicken Cole Slaw
            Baby Greens Salad with veggies
            Fruit Salad
            Delived Eggs

            Dessert is going to be Rice Krispie Treats and Easter candy.
            Anything listed on the park maps as an attraction is fair game for inclusion in the Rally.
            I cannot confirm nor deny the inclusion of any attraction in the Rally.

              Bar-B-Que time at Chez Oogie!!!

              New York Strips
              Bar-B-Que Chicken in Texas style sauce
              Corn on the cob
              Garlic Mashed Potatoes
              Spinach Salad in Raspberry Vinagarette dressing
              Margaritta Cheesecake for desert.
              Growing older is manditory
              Growing up is however, optional

                      Thanks, I know it is a lot of work but I enjoy doing it. I am actually going to start cooking tomorrow evening for my sauce for the lasagna and meatballs, starting some of the desserts and preparing the fruits, dips and cheeses for the platters. Just about everything is being made from scratch too except for the yams they are from a can

                        Just for the hubby and myself. Family is too far away...

                        Just took a beef tenderloin roast out of the freezer. Don't know what else. Definitely thinking about asparagus someway. Then there is the constant war of potatoes (me) vs. rice (hubby). If I'm cooking, guess what will win?

                          I know this is last minute and all, and you're on the other coast and all..........but can I come over?

                            Sure the more the merrier. There will certainly be enough food. If you can't make it I'll send you over some goodies.

                            It would be nice to have friends over also. Too much of family can make me go crazy (that is why I spend so much time in the kitchen):lol:

                              Truer words have never been spoken!! We host all the holidays and everyone pitches in and brings something. So my Mother-in-law will bring some rolls (one year they were stale) and some wine (I kid you not - one year they just brought the wine-in-a-box that was already open in their fridge). My mom has in the past gone shopping with me before a big event meal and help pay for the costs, which is very nice. Nowadays, she asks what to bring and usually forgets to bring all of it! My dad and stepmom are the best - if I ask for a dessert, she finds something that complements the menu and makes it. My stepmom and I tend to just live in the kitchen until it is time to eat and let everyone else visit. It's hard when you have the only kids! My kids have cousins, but they live in Texas, Maine and Tennessee!! So, really, they don't KNOW they have cousins much.



                              Back on topic - I got tired of spending all the $$ on the meal and not even getting help with the dishes, so I used Jeff's cancer as my excuse this year and we are going to a dinner buffet - at a casino!! The menu:

                              Our Unforgettable Salad Bar and Fresh Fruit
                              All for $22.95!!
                              Jeff took one look at the menu and said "yep, we're eating there!"
