Sorry I'm a bit late to the party, but I've always thought Disney should release the music they play in Walt's:An American Restaurant. Just as the dining rooms are themed to the lands of the park, so the music is taken from the various attractions, but re-arranged in a classy, classical style.
The arrangement of Grim Grinning Ghosts for cello and piano is my particular favourite. It's even better than the music in Phantom Manor itself! They've also got an orchestral version of It's A Small World, which is quite fun.

I completely agree. On my visit this summer, it was refreshing to hear all the familiar park music in an elegant style.
On a slightly unrelated note, I felt that the food quality was better than my last visit. I still don't dare return to the Blue Lagoon, but nearly all my meals were enjoyable for once. Walt's is definitely the best restaurant among the Magic Kingdoms; the atmosphere and quality of food reminded me of the high-end table service restaurants in Epcot and DisneySea.

The cello Grim Grinning Ghosts is available on CD - I have it. It is part of a collection of music from the entire park and was bought abouy four years ago.
