I thought ticket booths stayed open up to an hour prior to park closing.
But someone else can chime in if my answer is incorrect.
Do people actually pay full price for a few hours of park time (since Disney doesn't discount after a certain hour)

Anecdotally: They were still open last night at closing. I think the times may have changed since APs are now handled at the ticket windows now instead of the defunct AP center. People leaving at closing can still turn their day ticket into a pass as they leave.
According to a CM, the ticket booths are open 30 minutes before the park opens, and up to 30 minutes after the park closes! I think this is great news! Will call and the ticket booths are considered the same thing, so if you have vouchers you can get your tickets at any of the ticket booths.
My wife works in the ticket booths, so this one I know...They are open 1 hour before the park opens. and stay open until the park closes. If you walk up to a window 1 minute before midnight (or what-ever time the park closes) they will stay as long as it takes to complete that transaction and even help others in the que. Now not all booths are open all the time...early in the am booth 1, 2 and 5 might be open, at the end of the night only booth 5 stays open with 4 windows in operation.
