We are usually there before the Halloween Decor goes up in Disneyland so hopefully we will be ok? Current dates have us there September 19th, 20th and either the 21st or the 24th depending on if kids are done in trying to do 2 days in a row

It may depend on when/if they install the Halloween overlay that's been rumored.

We are trying to plan our trip to CA in mid/late September and the "schedule" only shows until part of August... does anyone know if they will do what they do with the fireworks and only show World of Color on the weekends or can we visit DCA on a weeknight and still get to see it?

WoC will almost definitely be nightly for a few years at the very least. You have nothing to worry about.
