My mom cannot eat gluten and I've heard that there are certain places that offer gluten free food. Is there a way to find out where and what offerings are gluten free? Thanks.

I'm gluten-free as well, and am able to eat very well in the parks.
Go to City Hall and ask for a list of the gluten-free foods offered in the parks (it is updated fairly regularly). When you go to order your food, make sure you tell the cast member that you have a gluten allergy - this usually brings the supervising chef out to you to discuss your needs. They then personally supervise the preparation of your food to ensure that no cross contamination occurs in the kitchen.
My personal favorite: Paradise Garden Grill in DCA. Chicken kabob with Moroccan chili sauce, white rice, and cucumber salad. Delicious, and gluten free!
Lately I've been very impressed with the level of care I've been shown to make sure the food I'm served is safe for me to eat. Even the front-of-house cast members are being trained. Disneyland Resort food service has come a long way in the past five years!
