1) Exactly what attractions are open during EE

2) If I go on an EE day and I don't have EE will it be too crowded even if I enter at official opening time? Keep in mind this is for my December(20, 21, or 22) trip and it will be CROWDED! The Thursday(21st)might be the only day we can go and it's EE.

When I have done it in the past it was Tomorrowland and Fantastyland and it was all the rides in those two lands.

There is no "exactly", as the rides can change from day to day. But there seems to be some regularity. In my experience all rides in FantasyLand are open except for:

IASW
StoryBook Land Canal Boats
Casey Jr Circus Trains

And in Tomrrowland just Space Mtn and BLAB, although I have heard the Astro Orbiters are sometime operated.

In answer to your second question, FantasyLand rides that will be especially crowded after EE will be Peter Pan and Dumbo. Some of the others may not be too bad - but the lines will not be nearly as short as first thing on a non-EE day. In TLand, Space Mtn and BLAB have FastPass and hence while those standby lines may be long you can get your FP and ride them later.

Star Tours and the Star Trader store are now part of Early Entry, to help make up for the fact that the Matterhorn and the Monorail are not available.
