Easter monday @ HKDL was jammed packed

Just look at the Main Street crowds alone.

Here is another view at the Main Street Train Station.

All attractions were up except for Grizzly Gulch(that area was picture taking and for getting food nothing else) and Toy Story Parachute drop

Were most of the food & beverage outlets open?

I saw there were long queues for food and snacks in other people's posts.

Just the 2 adventureland restuarants were shutdown: Tahiti Terrace and Riverview Cafe and also the Small World ice cream shop. The rest of the outdoor food and beverage and restaurants were open.

The Kabuni market sorta replaced Tahiti Terrace but its more outdoor food shop than a restaurant. You could say there are no restaurants in Adventureland. And yes food line ups were crazy long during lunchtime. You had to wait til 4pm til it started to die down.
