    I want to learn how to bake a loaf of bread without yeast.

    I have never baked a loaf of bread. The only kind of "bread" that I have made is the mixes in the box called "quick bread" or the traditional cornbread, which is also a mix.

    For dietary reasons, I am elimating yeast, as much as I can, from my diet. That means no bread. For a week, I have really missed the bread, so I thought why not try and make some. I have been scouring the internet for some recipes and I found a few.

    Tomorrow I plan on going to the grocery store to get some ingredients. I don't do a lot of baking from scratch. I never have. I rely too much on store bought stuff, and there's no yeast free bread in any of my grocery stores. I figure I will check out all the different types of flour. Perhaps one of them might have a yeast free bread recipe. The one I found sounded quite easy actually.

    As with other things in my life, I come to my friends the MiceChatters when I need assistance. You never let me down.

    Tomorrow I am going to bake a loaf of bread for the first time. That is, as soon as I buy the ingredients at the store. I'll let you know how it turns out.

    You need something to make it rise, either yeast or baking powder/quick breads. You can maybe make flatbread- that shouldn't need yeast.

      I'm not exactly sure what kind of bread you want to make - but a quick bread is going to be your best bet. A quick bread includes no yeast but uses ingredients like baking soda to help it rise.

      I refered to the cookbook I made in Jr. High which has a recipe for zucchini bread:

      1/2 c. Wesson oil
      1 c. sugar
      2 eggs, beaten
      1/2 tsp baking soda
      2 tsp. baking powder
      1 tsp. salt
      1 tsp. vanilla
      1 tsp. cinnamon
      1 1/2 tsp. grated orange rind
      1 c. ground zucchini
      1 1/2 c. all purpose flour
      1/2 c. chopped nuts (optional)

      -In a large mixing bowl, combine oil, sugar and eggs until light and fluffy.
      - Add baking soda, baking powder, salt, vanilla, cinnamon and grated orange rind in and mix well.
      -Add zucchini and flour alternately. Mix only enough to hold all ingredients together.
      -Add nuts and stir one last time.
      -Grease and flour a loaf pan. Pour dough into loaf pan spreading evenly.
      -Bake at 350 degrees and 1 hour.

      Yield: 1 Loaf

        quick breads are more like cake. Every bread I have made has yeast in it...I wish you luck on your quest.

          There are some recipes out there, but most of the yeastless breads are flat breads. Here one recipe.

          YEASTLESS WHOLE WHEAT BREAD
          2 c. buttermilk
          2 tbsp. melted butter
          3 c. whole wheat flour
          1 c. lightly packed brown sugar
          1 tsp. baking powder
          1 tsp. baking soda
          1 tsp. salt
          Don't preheat oven. Grease a 9x5 inch loaf pan. Whisk milk and butter in small bowl. Stir dry ingredients in large bowl. Make a well in center; pour in liquid and stir until smooth. Spread evenly in loaf pan. Bake at 350 degrees for 1 hour. (Place pan in center rack of oven.)

          In the flat bread catagory:

          Exquisite Yeastless Focaccia

          Ingredients

          1 cup water
          2 cups all-purpose flour
          2 teaspoons baking powder
          1 teaspoon salt
          1 tablespoon olive oil
          1 teaspoon cayenne pepper
          1 teaspoon garlic salt
          1 1/2 teaspoons crushed dried basil
          1/4 cup grated Parmesan cheese
          Directions

          Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13 inch baking pan.
          Pour water into the bowl of an electric mixer fitted with a dough hook. Sift together flour, baking powder, and salt, and add to the water. Mix on medium speed until dough forms a ball. (Or, stir together water, flour, baking powder, and salt in large mixing bowl. Turn dough out onto floured surface and knead until it forms a ball.)
          Plop dough into greased baking pan. Using oiled fingers, spread dough to 1/2-inch thickness. Dough will be sticky and elastic. It does not have to be perfectly even, but make sure there are no holes. Rub the top and sides of dough with olive oil. Season with cayenne, garlic salt, and basil.
          Bake in preheated oven for 20 minutes. Remove from oven; sprinkle with Parmesan cheese and return to oven. Bake until just golden, or about 5 minutes.

          I actually did find a few recipes for yeastless bread, but the ones I found were for use in bread machine. I've never used a bread machine, so I'm not sure if those recipes could be adapted for use with a regular oven or not.

            Here is the recipe that I found online. I made it, but it turned out too dense. I'm not sure if I mixed it incorrectly or I didn't knead it right. I have never kneaded bread before. When they say mix, am I supposed to mix with a sppon, or can I use a mixer. Oh well, for my first try, all I wasted was the flour. That didn't cost me much. I am still looking for something that will satisfy my craving for bread.

              Yeah, no surprise there.

              Unleavened breads are more like pitas and tortillas.

              Quick breads are so good and you can def. make them from scratch! Zucchini bread like was posted, bnana bread, cinnamon loaf.... mmm.

              If you want to buy some, I would look into Deli Flats, made by Arnold, I think and Pepperidge Farms has a version too. IDK if they have yeast, but they are flatter breads and very good!

                I have yet to hit the health food stores, or Whole Foods here in Chicago. However in the other grocery stores that I shop in, I have not been able to find any bread products without yeast. Corn tortillias are good, and have no yeast. Surprisingly the package flour tortillias that I have found all contain yeast. Flatbread is available at my local Jewel, but I refuse to pay the price for that which is ridiculous.

                I am still going to try a few recipes, and since I am not a frequent baker, I need to practice a few necessary skills. I grew up where everything we consumed was pretty much purchased in the store, and not made at home.

                  It didn't dawn on me until this evening that I could eat biscuits instead of bread. I have never made biscuits, but I am sure with a little practice, I could learn. Also, I need to check the labels on the refrigerated biscuits in the store and see if they have yeast in them.

                  I was on the Pillsbury website earlier, and there are a lot of really great recipes with the Pillsbury products.

                  Breaking the monotony of the way I have been eating for a very long time is actually a challenge. We get in a rut with our meals, and finding new stuff to eat is something that I really need to do.

                    Well, from the tour at the Boudin Sourdough Bakery in DCA, they say that the levening is done with mother dough, instead of yeast. So I looked up some recipes for sourdough:

                    Well, now looking into it further, looks like yeast is involved in even sourdough bread, whether it's yeast from a package, or "wild" yeast.

                      Out of curiosity, what dietary restriction would cutting out yeast help? I didn't think it was anything that would need to be cut.

                        Today I went back to the store for my thanksgiving turkey, and I did purchase some refrigerated biscuits. You know the ones, made by Pillsbury, and a few other companies. They are small, but that's good, it helps me keep the portion, and calories down to a good level. It was nice to have that bread flavor again with my eggs this morning. I did notice, that some of these products do contain yeast, and some do not.

                          Maybe try Bisquick. That is how I make biscuits, but IDK if there is yeast in the mix.

                            Thanks. That's actually a very good idea. I googled Bisquick and couldn't find the ingredients. However, I googled an online shopping service and found the ingredients that way. There is no yeast in Bisquick.

                            I know it probably seems a little unusual to some people that I haven't done much baking in my life from scratch. I do make muffins a lot. My husband takes them to work for his breakfast. However, I buy muffin mixes for the muffins that I make.

                            When I was a child, I didn't have any issues with any specific foods at all. I could eat just about anything. As you get older, you develop health issues, and when you can't find products in the store, you look for other ways to do things.

                            It's just me and my husband at home now. He eats different than I do, and has absolutely no problems eating anything. I tell him how lucky he is.

                            I am going to pick up a box of Bisquick in the store and learn how to make biscuits. It's good to put some new variety into the meals that I prepare for myself.

                              If you're doing the Bisquick biscuits, try both the 'drop' kind and the old-fashioned that you cut. I don't like the drop biscuits, they're just too heavy and dry/doughy, but the cut-outs are lighter and finer.

                                ypu won't have any issues with bisquick...it's much the same as using a muffin mix to make muffins.
