What is your guy's/gal's opinion on the easiest ride to operate? I'm thinking something along the lines of the little kid's rides....

Mickey's Philharmagic. No buttons or anything.
Um, most of the ones I ran (Fantasyland WDW) were button-pushers, and they were all pretty much the same.

The Haunted Mansion has to be easier than any of the kiddie rides in DCA or Fantasyland. For the most part, the doombuggies are constantly moving, and are in a loop, so there's no stop or start. When there is, nothing really gets "backed up", since once you restart the ride, everyone goes at the same speed.

                HISTA/ ASTRO
HISTA goes on a timed basis. You only have to press a button if you really need to.
                Astro is pretty simple too.

But yes, I also worked HuffnPuff at Knotts and it was a fairly easy ride to operate.
