Glad I'm not in attractions. Stores don't close, and when they do- we go to another store. They're all pretty much the same, no special training needed.
Not necessarily I have a few friends that have been at the resort for years and years that LOVE working fantasmic guest control shifts. That being said. . . generally CMs with high senority will bump those with lower senority to other shift locations and/or times. The problems come when CMs aren't cross trained or... all the attractions they are trained on are closed at once (this has happened) at these times, the CMs are slotted to Fantasyland Theater guest control, Fantasmic (thank God we have this show more than just in the summer now), or misc support (soon to be parade support for WDPOD).

Aren't the other attractions already well-staffed? Or do they just double up on CMs during that time?
This is just a guess on my part.

I would guess they senior employees get sent to other attractions. Less senior employees at the closed attractions or who are bumped by the most senior employees get their hours cut.

Again, this is just a guess.
