      • Well, it's taken me months to get sucked into this thread but here goes:

        To start is a salad of sliced tomatoes, sliced mozzarella, fresh basil, julienned and a sprinkle of good olive oil and Balsamic vinegar.

        I have some Ahi Tuna which I'm marinating in a little sesame oil, garlic, black pepper and fresh ginger. In the meantime I've made a salsa using crushed pineapple as the base and adding reconstituted dried cranberries, fresh ginger and coconut to serve over the grilled fish. Serving it with steamed rice with chopped green onions, soy sauce and a side of stir fried vegetables.

        For dessert is sliced apples, pears and a cheese platter .

          This is my favorite dish in the whole wide world!!!!!!! I live for summer and the fresh tomatoes to make this!

            I'm going to be working, so it won't be an actual dinner. More like a cookie or bar

            • Appreciate the nice comments. DQ, that is one of my favorite salads, too when you can get really good vine ripened tomatoes.

              Another good one is mixed baby greens, toasted walnuts, crumbled gorgonzola or blue cheese, dried cranberries and a raspberry vinaigrette dressing.

                Get thee to Trader Joes. They have the yummiest Baby Spinach bagged salad, as described in my dinner menu for this evening.
                Anything listed on the park maps as an attraction is fair game for inclusion in the Rally.
                I cannot confirm nor deny the inclusion of any attraction in the Rally.

                    Thanks, mamabot! I hit TJ's at least once a week since it's only 10 minutes away. All their washed salad fixins are great and the best prices in cheeses along with most everything else.

                        • I went through every post on this thread over the past several days while taking notes, jotting down menus and getting some fresh approaches to meals.

                          We eat pretty much from scratch and I've noted many very good cooks in MC who appear to cook that way also.

                            • Tonight I'm going to make indian curry with chicken and carrots over yummy jasmine rice. (i get these really cool curry *cubes*, kinda like a bar of chocolate. They are MUCH tastier than the canned curry sauce).
