Re: Horderves, please post your favorites!!!

I mentioned it on your other snack thread, but I like whole wheat crackers with cream cheese, smoked salmon, and fresh dill on them.

If you want to go super classy, get some fingerling potatoes (aka, really tiny potatoes, red or white skin preferably), boil in the skin until they are done, but still a little crispy. Lop off the tops and hollow them out a little. Fill the hole with a little cream cheese and then top with a little dollop of caviar (black or red works just fine for this dish).

And for some old school hors d'oeuvres, deviled eggs!

A favorite of mine is Spinach Pie.... Spanikopita is what Greeks call it...

Usually it's served as a meal but I like to make it and cut it into bite size squares.

It's made with filo dough, spinach and feta cheese. I'll post the receipe once I find the card I have on it.

Can be eaten cold or hot

Oh man, spanikopita is AWESOME!!!!! Do you use lemon juice in yours? I've had a couple of different versions, but one had a hint of lemon juice in it and it was fab-u-lous!

My fav is jalepeno stuffed with cream cheese and wrapped in bacon!

            SO yummy!

You'll need about a pound or so of fresh jalepenos (i never measure, just guess!)

a packet or two of cream cheese

            a packet of bacon

Remove the stems from your peppers and slice length wise. Scoop out all seeds and any white part. (It's best to use some gloves for this!) Rinse well. Scoop a little bit of cream cheese (I used a regular cereal spoon) into the pepper and wrap with half a strip of bacon. I find that if you just use half a strip of bacon, it's just enough.

Place these on a broiler pan or rack over a pan...just something that will allow the grease to drain off. And back at 350 until the bacon is done...time will vary.

They are wonderul! By removing the white stuff from the pepper, it takes alot of the spicyness away. But you still get some spice..depends on your peppers!

                Ham rolls

                Slices of deli ham
                Cream cheese
                green onions

Take a slice of ham, spread it with cream cheese. Lay a washed green onion at the top of the ham slice and begin rolling into a loaf. Slice off little half inch slices and serve!

I could eat these for days!!!!!

One that my brother makes every Thanksgiving:

                                We'll call it Heavenly Bites:

                                Puff pastry cups
                                Brie
Cranberries (he uses cranberries from my mom's homemade cranberry sauce)

Defrost puff pastry. Place a chunk of brie on puff pastry. Top with a few intact cranberries. Bake according to the directions on the Puff Pastry box.

The first year he made this hors d'ouevres he used the sheet puff pastry which he used the rim of a wine glass as a cutter. it was a little bit too time consuming for thatnksgiving, so last year, he went the easy route with the shells. These things are gone before they hit the table!

I thought of another one I haven't made in soooo long! It was a recipe I adapted from an appetizer on the menu at Carrabas Italian restaurant.

                                Bruschetta

                                Baguette of your liking, sliced
                                Olive Oil
                                Pesto
                                Gruyere or Fontina Cheese
                                Sauteed Mushrooms
                                Sliced & Roasted roma tomoates
                                Fresh Basil

Place sliced baguette pieces on baking sheets. Lightly brush with the olive oil. Put a small amount of pesto on top of each slice. Top pesto with a slice of cheese. Do half the batch with a leaf of basil & a slice of tomato. Top the other half with a table spoon (or so) of sauteed mushrooms. Bake at 350 for 10 minutes. If you want the cheese to be a little browner, you could always let it sit under the broiler for a moment.

Anything listed on the park maps as an attraction is fair game for inclusion in the Rally.
I cannot confirm nor deny the inclusion of any attraction in the Rally.

Just wanted to add, when I"m doing a huge meal like Tgiving I like to put out tons of little things in heavy traffic areas. Like bowls of olives, pretzels, mixed nuts, celere with cream cheese or pb(the kids love these)

I also love doing a giant antipasta platter
                                    slices of salami, pepperoni, prosciutto
                                    slices of provolone, mozzarella etc
different types of olives, artichoke hearts, roasted red peppers.
