So I've read a lot about the West Coast meet-ups and definitely hope to make it to those someday, but I was wondering if there were any meet-ups on the East Coast or even outside the parks in the Midwest. I've visited Disneyland once and I like the West Coast but right now it's so faaaaaaaaaaaaaar.

There have been MiceChat meets all over the world!
The WDW MiceChatters try to meet up about once a month (depending on schedules). And groups of chatters have gotten together in cities all over the place.
If you are interested in starting a meet, I'd suggest picking a theme park or Disney movie to base a meet on. Then post about the event and see if you get any takers. The worst thing that could happen is that no one is available that day.
Keep track of other people who live around you and keep them all in contact with eachother, or perhaps even start a club in MiceChat Gold for Midwest MiceChatters.
We have groups in Arizona and the Pacific NW who hold meets all the time, no reason why you shouldn't do the same
