I assume the Pepsi/Pee quote is regarding the lack of water fountains on opening day due to lack of time for the plumbers to finish.

When Walt was building his backyard railroad he designed a tunnel that was built on a curve so that the rider of the train would be in complete darkness before eventually seeing the end of the tunnel around the bend. When the contractor posed that it would be cheaper to build the tunnel straight, without the curve, Walt exclaimed "Hell, it would be cheaper not to build it at all!"

Walt never cut corners. If he was going to do something, it was going to be done right. That is what I admire most about him.
